Crunchy Baked Turkey Tacos
INGREDIENTS

3 tbsp avocado oil⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1/4 cup diced white onion⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 lb ground 93% turkey⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 tsp kosher salt⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1/2 tsp black pepper⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 tbsp taco seasoning⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 [4-ounce] can diced green chiles⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 tbsp tomato paste⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1/4 cup chicken broth⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1/2 cup shredded cheese⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 16 15-calorie @mrtortilla tortillas⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1/2 cup shredded lettuce⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 roma tomato, seeded and diced⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 2 tbsp chopped cilantro⠀⠀⠀⠀⠀⠀
- hot sauce ⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 lime, cut into wedges⠀
INSTRUCTIONS
1. Preheat oven to 400 & line a baking sheet with parchment paper.⠀⠀⠀⠀⠀⠀⠀⠀⠀
2. Heat a skillet over medium-high heat with 1 tbsp of avocado oil. Add the onions, ground turkey, salt, pepper, and cook until no longer pink (about 7 min), breaking up the meat as you go.⠀⠀⠀⠀⠀⠀⠀⠀⠀
3. Add the taco seasoning and stir until fully incorporated into the meat (1 to 2 min).⠀⠀⠀⠀⠀⠀⠀⠀⠀
4. Pour in diced green chiles (undrained), tomato paste, and broth and stir until well combined. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
6. Remove from heat, cover and cover keep the meat warm while you prepare the tortillas. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
7. In a small, non-stick skillet, heat 1/2 tsp of avocado oil over medium-high heat and quickly fry 1 tortilla (about 30 seconds on each side) until flexible and easy to fold.⠀⠀⠀⠀⠀⠀⠀⠀⠀
8. Set the tortilla on the prepared baking sheet and spoon about a tbsp of meat onto one side of the tortilla, and sprinkle cheese onto the other. Gently fold the tortilla in half to form a taco. Repeat until you’ve used all the filling.⠀⠀⠀⠀⠀⠀⠀⠀⠀
10. Transfer baking sheet to oven and cook until turkey tacos are crispy and golden browned, about 10 minutes.⠀⠀⠀⠀⠀⠀⠀⠀⠀
11. Remove from oven and let tacos cool until you can handle them. Gently open the crunchy turkey tacos, fill with lettuce, diced tomatoes, and cilantro. Serve with lime wedges + hot sauce & enjoy !
