Low Carb Huevos Rancheros

INGREDIENTS

2 tbs onion chopped

1 tbs jalapeño chopped

1 tbs tomato chopped

1 garlic minced
-
2 tbs tomato paste
-
1 cup water
-
1 tsp Knorr
-
1 tsp garlic powder
- 1 tbs avo oil
- 1 Pack Mr Tortilla 1Net Carb tortillas
INSTRUCTIONS
- Sauted all the veggies in avo oil except the garlic. Once veggies are soft add the garlic and saute 1 more minute then add tomato paste, water and seasonings. Mix well and bring to a boil then simmer and adjust seasonings.
- To assemble you lightly fry your tortillas in avo oil, top with refried beans, sunnyside egg, ranchero sauce, cabbage, crema, cotija, cilantro and salsa habanero. Some people might add more or less toppings but this is how I make mine.
- Tip ~ make sure you have everything ready and lined up because once you fry your eggs it all goes by fast.
