Low Carb Shrimp Tacos w/ Chipotle Sauce

INGREDIENTS
SHRIMP
- 1 pound shrimp, peeled and tails removed
- 1 Tbsp avocado oil
- 1/2 tsp cajun seasoning
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp pepper
CHIPOTLE SAUCE
- 1 tomato
- 1/8 of a onion
- 1 garlic clove ( roasted)
- 1/2 tsp salt
- 1/2 tsp oregano
- 1/2 tsp cumin
- 1/2 cup mayonnaise
- 4 chipotle peppers in adobo sauce (blend everything together and done)
INSTRUCTIONS
TO MAKE SHRIMP
- In a bowl toss shrimp with oil and the spices.
- Heat a large skillet over medium high heat. Add shrimp and cook for 3-4 minutes each side until the shrimp is pink and opaque.
TO MAKE CHIPOTLE CREAM SAUCE
- In a blender, toss mayo with chipotle pepper in adobo sauce, tomato, onion, garlic clove, salt, oregano, and cumin blend until smooth. Set in the fridge until ready to use.
- Serve tacos w/ cabbage extra salsa and squeeze of lime juice.
